WHIPPED CREAM CHEESE FROSTING

Hello everyone! A few days back I had made a very delicious yet very simple cake as my Anniversary gift to my ever doting husband who has a huge sweet tooth. That cake was a sugar free chocolate cake which was shaped as a heart and had a silky soft whipped cream cheese frosting on it. Today, I am going to share the recipe of this frosting with all of you interested. I should also add that this particular recipe makes me super proud and happy. Why, you ask? Well, that is because I made this recipe on my own. I did not refer to anyone else’s recipe, neither did I follow any of my own earlier recipes. I just searched through my fridge and did what turned out to be this amazing frosting!

So, in all honesty, I would like to confess that I did not really plan to make that cake. It was a split second decision. I knew I wanted to bake a chocolate cake but I hadn’t decided on what kind of frosting I would make for the cake.

Now, as some of you may know that I am following the KETO diet and thanks to that, I always have heavy whipping cream in my fridge. So when it came to deciding on what kind of frosting I should make, I knew that I had to use the whipping cream.

If any of you has made plain whipped cream frosting ever, you would know that it is usually good to be used as a filling for a cake but not when you plan to use a piping bag for frosting with it. I don’t really prefer whipped cream for frosting my cakes with a piping bag. Firstly, there is the risk of it melting under hot weather and secondly, if you are using a piping bag, the frosting doesnt come out smooth. There may be air bubbles in whatever pattern you try to make¬†with it. Heck! I don’t even know how exactly to explain. I hope at least some of you got my point.

So the other option for me was to make a buttercream frosting but personally I find it too sweet sometimes. Also, more importantly, it is not my favorite thing! If I make the cake, I make it the way i like it best! Isn’t that the whole idea?!

So fortunately, I had a brick of cream cheese also lying in the fridge which I had bought to make keto friendly cheesecake or fat bombs. Luckily, I hadn’t been able to get around to that yet. So I had that staring at me from my fridge.

Eventually I decided to use whipping cream, cream cheese and as little powdered sugar as possible!

I used some of this and some of that, slowly till the consistency of the frosting looked just right to me. But when I tasted it, my mind was blown! It was sooo creamy and delicious. At the same time, it was airy and light because of the whipped cream. I simply love this whipped cream cheese frosting!

Without further ado, let’s get onto the recipe.

Instructions
  1. In a cold bowl, take the whipping cream and add the lemon juice. Whip it till it reaches a stiff peaks consistency.
  2. Take softened cream cheese (it should not be too soft). Ideally, it should not be kept outside the fridge for more than half an hour. If it is softer than that or at room temperature, the frosting would end up being more runny than required.
  3. Beat the cream cheese until soft and creamy. This should not take more than 20 seconds. Don't overdo it.
  4. Add the powdered sugar and gently mix it with a spatula. Add the sugar in three parts.
  5. Gently fold the whipped cream into the cream cheese sugar mixture. Again add the whipped cream in three parts.
  6. Voila! Your Whipped cream cheese frosting is ready to be used!
