SIMPLE VANILLA CAKE WITH WHIPPED CREAM FROSTING

This is a very simple and completely no fuss Vanilla cake recipe – super moist and full of flavor. The cake has been frosted with a vanilla flavored whipped cream frosting. Yummy!

Yes. I make too many cakes. I guess it won’t be extrapolating if I say that I am an extremist in this respect. If something clicks with me, I do it till I feel like I’ve tried everything and learned as much as possible. In terms of baking, that phase is still going on. I am very passionate about food and baking has been one of interests since a long time. Cake is love. So I guess no one is complaining!

When I cook, especially when I bake, one of two things happen. Either the photos that I click don’t appeal to me enough to put on this blog or the photos come out decent and gather courage to share them with everyone. It is a work in progress and I try to give myself some leverage. I have not received any kind of training from anywhere or anyone. Whatever I am able to do in terms of photography is a result of my passion. Why I am telling you all this? Because after months of contemplation, I have finally gathered courage to share these photos with you.

Yes. I made this cake last year. But never had the courage to post it. The cake turned out pretty awesome, no doubt!

I have realized that I have to keep checking myself. I come down too hard on myself most of the times. As I am sure most of us do. So I decided to post these photos even if I feel that they are not entirely up to the mark. This is my journey. I started from zero and if not much, I have at least come to a 0.5! So I would like to share these with you.

About the cake now. It’s very simple. Only two bowls required. No mixer. You can do everything without working out your arms. Trust me, it is very easy.

The cake comes together in less than an hour. That’s because the frosting also gets done in a few minutes. Sound too good to be true. Believe me, it is true!

Without further ado, let’s jump right to the recipe.

  1. Preheat the oven to 350F and line two 9 inch baking pans with parchment paper (place parchment paper only on the bottom of the pan).
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda and salt.
  3. In another bowl, whisk the eggs lightly. Add the milk, water, oil and vanilla extract and whisk well. The addition of oil will ensure that even if you store the cake in the fridge, the cake will remain soft whereas butter solidifies and makes the cake harder.
  4. Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix slowly and patiently but make sure not to overmix. Mix just until the ingredients are combined. You may see some lumps in the batter which is alright.
  5. Now divide the batter into the two pans and bake for 27-32 mins. Every oven is different so you will have to check after 27 mins. A toothpick inserted in the center should come out clean with a few crumbs stuck to it.
  6. Remove from the oven and let them cool on wire racks for about 10 mins. Remove from the pans and let them rest while we make the frosting.
FROSTING
  1. Using a chilled bowl and a chilled beater, whisk the whipping cream until frothy.
  2. Add the icing sugar and vanilla while beating.
  3. Whip until a thick and light enough consistency to frost a cake. Done!
