SMALL BATCH CHOCOLATE CAKE – FOR TWO!
A small batch chocolate cake made for two and frosted with a strawberry and banana flavored buttercream!

CAKE
  1. Preheat the oven to 350F and line a 9″ cake tin with parchment paper and spray a non stick spray on the sides.
  2. Dissolve cocoa powder in the hot coffee and set it aside.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt and sugar.
  4. Mix egg, oil, vanilla and sour cream. Mix well until incorporated.
  5. In a steady stream, pour in the cocoa coffee mixture and mix well until the batter is smooth. This batter would be pretty runny, so don’t worry about it.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes, or until the toothpick test reveals a few crumbs sticking to it.
  7. Let it cool in the pan for about 10 minutes and then transfer to a wire to cool off.
FROSTING
  1. Beat the softened butter until smooth and creamy. Add powdered sugar, the banana and strawberry extract, powdered sugar and milk. Beat until light and fluffy. This should take about 5 minutes.
ASSEMBLY
  1. Remove the cake and flip it upside down. Frost the top and sides of the cake. Smooth them as much as possible.
  2. Slice the cake into quarters. Stack each quarter on top of each other. Smooth the sides of the slice thus formed. Enjoy!
