SMALL BATCH CHOCOLATE CAKE – FOR TWO!

This is a perfect recipe for making Small batch Chocolate Cake – to rescue you from times when you don’t want a huge cake or are simply planning a small and romantic dinner with your loved one. Yields only two (standard size) or three (smaller) cake slices.

We all love desserts? Don’t we? And when it comes to cake, most of you would agree with me that even the thought of cakes causes instant salivation! Imagine a moist and soft dark chocolate cake, four layers and frosted with strawberry banana flavored buttercream. Please tell me that your mouth didn’t just start watering.

Cakes are delicious. We all agree. But we all would also agree that eating cakes are hardly ever guilt-free. My small batch Chocolate cake for two would help eliminate that problem. You can make this cake and be sure that you wouldn’t have to fight cravings for the next few days on end.

I am on the keto diet. Which means I can’t have cake. Apart from on special occasions (which I probably shouldn’t). At least not a ‘normal’ cake. This time the special occasion was my BIRTHDAY! I had told my husband beforehand that it is going to be a cheat day for me. And he bravely agreed to have a cheat meal (dinner) instead of the whole day. Now since it was my birthday I couldn’t not make cake.

After a lot of contemplation whether I should make a keto friendly chocolate cake or whether I should not make a cake at all. I think God saw my dilemma and saved me from having a cake-less birthday! While browsing through hundreds of searches, I finally found my recipe!

A cake for two! Brilliant! A small batch cake!

This meant, no wastage, no guilt for the next day and no leftover cake. Cheat meal meant cheat meal.

I decided to enjoy the cake on my special day and not feel guilty the next day.

That was what I was majorly happy about before I made the cake. What made me really really happy was that the cake turned out awesome! This is such an amazing recipe and extremely simple (like all my other recipes!). The special ingredient is sour cream, apart from two bowls and a few other common ingredients.

The cake is frosted with a Strawberry and Banana flavored Buttercream. The best I have made so far! Believe me!

Instructions
CAKE
  1. Preheat the oven to 350F and line a 9" cake tin with parchment paper and spray a non stick spray on the sides.
  2. Dissolve cocoa powder in the hot coffee and set it aside.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt and sugar.
  4. Mix egg, oil, vanilla and sour cream. Mix well until incorporated.
  5. In a steady stream, pour in the cocoa coffee mixture and mix well until the batter is smooth. This batter would be pretty runny, so don't worry about it.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes, or until the toothpick test reveals a few crumbs sticking to it.
  7. Let it cool in the pan for about 10 minutes and then transfer to a wire to cool off.
FROSTING
  1. Beat the softened butter until smooth and creamy. Add powdered sugar, the banana and strawberry extract, powdered sugar and milk. Beat until light and fluffy. This should take about 5 minutes.
ASSEMBLY
  1. Remove the cake and flip it upside down. Frost the top and sides of the cake. Smooth them as much as possible.
  2. Slice the cake into quarters. Stack each quarter on top of each other. Smooth the sides of the slice thus formed. Enjoy!
