Shirataki Noodles are a low calorie, gluten free and zero net carb noodles which I have successfully used to make this delicious and out of the world guilt free Shirataki Noodle Stir-Fry with Chicken and Veggies.

Noodles, more specifically Chowmein is my ‘cheese’. It means to me what cheese means to Jerry (of Tom & Jerry). I miss Chowmein more than any other kind of food that I miss from my time in Delhi. I love it with all my heart. So when I was contemplating and researching on the keto lifestyle, one thing that made me really apprehensive was how I was going to manage my cravings for Chowmein, the kind that we get on the streets in Delhi. Or any other kind, really, as long as it is made the indian Style!

Honestly, at that time, I just jumped into this lifestyle and figured that I will deal with the cravings as and when they come. One month passed pretty smoothly. But then one fine day, I saw a post on Facebook which mentioned keto noodles. The goal of my life, atleast the short term goal changed suddenly!

I put my researching gloves on and read everything I could find about these noodles. They are called Shirataki Noodles. And I saw them available on amazon. My favorite ones are these.

These come in individual packets, like Maggi.

There were a number of reviews everywhere I went. Some were good and a lot of them were really bad. People mentioned a strange fishy smell when they opened the package. But considering my loyalty towards Noodles, I decided to go ahead with it and ordered myself a pack of 6 shirataki noodles from amazon. I took the dive!

While my package was in transit, I put my gloves on again and took to Youtube. I saw many videos on how to cook these noodles correctly such that there was no smell whatsoever.

Once I received my Shirataki Noodles, there was no stopping me.


These Shirataki Noodles are very easy to prepare and are low calorie, no net carbs and gluten free. Imagine eating something with practically no calories and no carbs!! Wow! Only Fibre!

This recipe can be made with any combination of vegetables and meat. If you are on keto, just make sure you balance out your macros (for the veggies, chicken or other sauces that you may use). You can check out a photo of the same that I posted on my Instagram page a few days back.

  1. As and when you open the packet, you will be hit by a strong fishy smell. It is not pleasant! But don't let it deter you. The noodles would be in a pool of liquid inside the packet. You want to drain that liquid and wash the noodles under running water for about 10-15 minutes. The noodles are pretty long. You may want to cut them with kitchen shears into desired size.
  2. Alternatively, you can wash the noodles for about a minute and then put the noodles in boiling water for about 5-7 minutes. This should get rid of the fishy smell.
  3. Next, in a non stick pan (preferably), add the noodles and stir and cook for a few minutes till the noodles are completely dry. This should be about 5 minutes.
  4. Your noodles are ready to be used as normal.
  1. In a bowl, marinate the chicken pieces in some salt, pepper and sriracha sauce for about 15-20 minutes. In a wok, add 1 tsp sesame oil and the chicken. Sauté till chicken is cooked. Remove.
  2. In the same wok, add the sesame oil. Once heated, add the chopped ginger, garlic and green chillies and sauté for 30 seconds.
  3. Add all the sliced vegetables together. Cook on high till the vegetables become somewhat tender.
  4. Add the chicken and stir everything well. Add the soy sauce and the chilli garlic sauce and mix again. Add the salt and pepper.
  5. Add in the noodles and mix everything well.
  6. All you need to do now is enjoy!
