Mango Cheesecake – For a Fluffy and Delicious cheesecake

Hello everyone! I am a really lucky girl. You ask why? Let me ask you a question. Don’t they say happiness is when you get to do things that you love doing? Well, that’s me. I get to do things that I love, thanks to my husband! In him, I have found a partner who motivates me to follow my passion, which happens to be cooking. Well, he is also my assurance that all that I cook gets eaten!  Also, because of him I got to combine my love for baking and his love for desserts and make this delicious MANGO CHEESECAKE!

It was all in my head!

Ever since I came to the States, I have been loving the cheesecakes that we get here. Goes without saying, every meal we have outside, inadvertently ends with a cheesecake. Both of us totally love them. My husband, Nishant, has been requesting me to try my hand at making one at home. What he did not realize was that I was secretly scared of cheesecakes! I knew that cheesecakes are a lot of hard work. Or so I thought!

My fear and hesitation to make one myself was a result of my ignorance, it turned out. So I did some research and found the perfect recipe for me! Cheesecake may seem like an intimidating project but it truly is not! Trust me. It was all in my mind. Once I made it myself, I realised that it is going to be my ‘thing’ from now on!

Now let me give you a few tips for making the perfect cheesecake. Firstly, in order to prevent the surface from cracking, what you need to do is let the cake cool slowly after baking. For this, let the cake remain inside the oven with the oven door left ajar after the cake is baked. This allows the cake to come to room temperature slowly over a period of a few hours. Secondly, be patient! The cake needs to chill overnight, at least. So it would be good if you make it one day in advance.

Mango Cheesecake
This is the recipe for the most luscious and delicious cheesecake with favors of mango! Perfect for impressing your peers!

For base
  1. Combine the crumbs with the melted butter and sugar.
  2. Press firmly on the bottom of the pan. Use the back of a glass to smoothen and flatted it. Bake for 10 minutes in a preheated oven at 350F. Put that in the fridge to cool.
For the Cheesecake batter
  1. Prepare an 8 inch springform pan and cover it properly with aluminium foil from the outside. We need this because we will be putting this pan in a bigger baking pan filled with water while baking.
  2. We need whipped cream cheese because it gives you a fluffier end product. Place cream cheese, sugar, eggs and cream in a mixing bowl. Using a hand held mixer, whisk on high speed for about 5-7 minutes. Make sure you scrape the sides of the bowl often.
  3. Pour the batter in the prepared pan. Let it stand at room temperature for a few minutes so that all air bubbles are removed from the surface.
For mango coulee
  1. Chop the mango and puree it.
  2. Run the pulp through a sieve so that all the fleshy part is separated from the pulp. Keep it aside.
Assembling and baking
  1. After pouring the batter in the cheesecake pan, put spoonfuls of the mango coulee on the cheesecake batter. With the help of a toothpick, create a marble look.
  2. Reduce the oven temperature to 325F.
  3. Now place the cheesecake pan into the larger baking pan. Fill the baking pan with about 1 inch water.
  4. Bake the cheesecake at 325F for 15 minutes. Then reduce the temperature to 270F and bake for 1 hour and 30 minutes.
  5. After 90 minutes, the center of the cheesecake would be slightly wobbly. Open the oven door slightly and let the cake cool down on its own inside the oven only. We need to make sure that the cake reaches room temperature slowly.
  6. Refrigerate the cheesecake overnight.
  7. Next morning, carefully, remove the springform pan. Serve!
