Hello everyone!! It has been a while since I have been on the KETO diet. And as I mentioned in my last post, I am really happy with my decision to go on this diet. I have been feeling much more energetic, happy and therefore, more productive! And that I see as a huge reassurance that this is the right thing for me. I eat when I am hungry and it is usually something that I make at home. Going on keto does not at all mean that you have to compromise on taste. The one thing, though, that I was really missing was some dessert. I was craving for something sweet as well as something totally chocolatey. Thankfully, I found this simple recipe which is like hitting two birds with one stone! KETO CHOCOLATE FUDGE COOKIES! If you are interested in the recipe, please read on further.

KETO CHOCOLATE FUDGE COOKIES

You will require very few ingredients for this and I promise you, these cookies will be done and ready to eat within 30 minutes! That’s not a long wait considering how delicious the results would be!

These Keto Chocolate Fudge cookies are perfect for any occasion or just when you feel like having something sweet any day. Why not! The sweet intense flavor comes from the unsweetened cocoa powder that is used in this recipe. That, combined with almond flour and eggs, give these cookies a soft and chewy texture. From what I have heard, achieving a soft texture is sometimes difficult when you are baking keto style. But these cookies were such a success!

Next time, I go to a party or something, I am definitely going to carry my own Keto Chocolate Fudge Cookies!

An amazingly simple and delicious chocolate fudge cookie recipe, which is very low in carbs and high in fat!

Instructions
  1. Combine the cocoa powder and the sweetener in a mixing bowl.
  2. Add melted butter to this and mix well using a hand blender.
  3. Once combined, add the eggs, vanilla extract, baking powder and salt.
  4. Now add the almond flour and mix well. You should have a thick dough like mixture which should be easily moldable by hand.
  5. Shape into cookie shape and place on a lined baking sheet. Keep in mind that these cookies don't expand so shape them accordingly.
  6. Bake in a preheated oven at 350F for 12-15 minutes. Cool and enjoy!

These cookies can be frozen for 2-3 months.
