It is no secret by now that I am enjoying the Keto way of living. I love to cook and I am constantly trying to find newer and exciting combinations of ingredients to keep myself busy as well satisfy our taste buds.

Earlier, I could never imagine cooking a dish that had both cauliflower and chicken together. I had never had this combination before. I honestly, still can’t cook a dish with these two Indian style. I know people do but it is still a far fetch for me. Anyhow, I saw a lot of videos on YouTube with people cooking a casserole recipe with various vegetables and meat combinations. I watched a couple of recipes but in some, the amount of cheese was too much or the amount of vegetables was not as per what I like to follow on a daily basis.

So, I decided to mix and match a couple of ingredients and customise the recipes as per my Indian taste buds. Even if a recipe is laden with cheese, I can’t do away with my love for spice. I got that straight!


This recipe is a saviour for me! Like I mentioned earlier, I love to cook. But sometimes, I know I am going to have a busy couple of days. This is the recipe I go to on days like those. Takes hardly 30 minutes to come around and lasts at least two days (that is if I can control my ever fluttering tongue!). No hassle. No hard work.

And did I mention it taste absolutely divine! How could I go wrong with cheese and two of my favorite ingredients – Chicken and Cauliflower!

Another silly thing that I forgot to mention earlier is that since I started Keto, I always wanted to make a casserole. But I had not casserole dish. So, I bought the casserole dish in hopes that someday I will make a casserole recipe. Finally, I put that to good use.

So, without wasting any more time, let us jump to the recipe.

  1. Firstly, cut your chicken into small chunks and mix in the pepper powder, red chilli powder, garlic powder, cumin powder and salt. Let it sit for about 10 minutes.
  2. In a pot of boiling water, cook the cauliflower florets till they become fork tender.
  3. While the cauliflower is cooking, heat ghee in a pan and add the marinated chicken and cook till all the juices are dry and the chicken looks brown from all sides.
  4. Once the chicken is almost cooked, add the chopped tomato and green chillies and cook for a few more minutes.
  5. Transfer to a bowl and add the sour cream, cream cheese and half of the mixed shredded cheese. mix well until all cheese is melted.
  6. Drain the cauliflower and add the parmesan, rest of the shredded cheese and salt. mix well and mash using a potato masher.
  7. Now arrange/spread the chicken mixture on a casserole dish. Layer the mashed cauliflower on top. Add some chopped mushrooms on top. Garnish with chopped cilantro if you like!
  8. Bake in preheated oven at 375F for about 20 minutes or till the top looks a little brown.
  9. Divide into equal sized portions and enjoy!
