KETO SPICED CAULIFLOWER DRY CURRY – PANCH PHORON GOBHI MASALA

Cauliflower or gobhi, as we call it in Hindi is my absolute favorite vegetable. I am so glad that I can savour this veggie even on my Keto journey. This recipe is a spicy keto cauliflower curry which uses a particular blend of spices and tastes absolutely amazing even if you are not on keto!

Hello everyone! Everyone in my family and friends know that Cauliflower is my favorite vegetable. I don’t crave any other sabzi/ dish more than Gobhi Aloo ki sabzi that my mom used to make. Gobhi Aloo ki sabzi is an Indian style spicy curry made with Cauliflower and potatoes. I can still smell that aroma wafting through the kitchen from years earlier. Each time I go back home to India, Gobhi aloo is the first dish that I tell my mom to cook for me.

On keto, obviously I am not allowed to have any potatoes. But I am so glad I can have cauliflower.

I usually make one whole head of cauliflower and eat it in small servings over a period of two days at least. But this time around I used a different recipe and used some spices that I had never used before in my cooking.

A few days back, I saw the Panch Phoron spice mix in the Indian grocery store here and I couldn’t stop myself from quickly throwing it into my cart! My husband thinks I am totally crazy. I guess you could compare me to a little kid stepping in a candy store after months of starvation. Only I am far from a little kid and I practically go to the grocery store every week! And I cant help myself but skip from aisle to aisle with my eyes scouring for some new ‘toy’ to play with. My kitchen is my playground!

So coming on to the Panch Phoron spice mix. Panch Phoron literally means ‘five spices’ and is a blend of five whole spices. These spices are cumin seeds (jeera), fennel seeds (saunf), nigella seeds (kalonji), black mustard seeds (rai) and fenugreek seeds (methi daana). So, if you can’t find this spice mixture in the grocery store or if you don’t have it at hand, you can mix these five spices in equal quantity and use it. Trust me, this blend gives such a flavorful elevation to any dish. Just use a small amount, about a half teaspoon and you will be good.

  1. In a wok or big pan, add the ghee. Once it gets a little heated, add the panch phoron masala and the cumin seeds. Lower the heat and let them splutter. Add the heeng/ asafoetida.
  2. Keep the heat on low and add the chopped ginger. Sauté for about a minute. Then add the dry spices except the salt. Stir continuously and make sure the spices don't burn. This means that the spices should not turn brown.
  3. Add half a cup of water and add the chopped green chillies. Sauté for about 30 seconds. Now add the cauliflower which has been cut into florets.
  4. Mix everything really well. All the florets should be properly and evenly coated with the masala.
  5. Now turn the heat to medium low and put the lid on. Cook covered for about 5-7 minutes.
  6. Keep checking and stirring once in every 3 minutes. Once you see that the florets are 80% done, remove the lid altogether and increase the heat.
  7. Add the salt and cook while stirring. Be gentle with the stirring because you don't want the florets to break or become completely mashed.
  8. Cook on high flame till the cauliflower is completely tender. Check seasoning and garnish with some chopped coriander. Serve and enjoy!
