INDIAN STYLE MUSHROOM CHEESE OMELETTE – A KETO BLESSING

Yello everyone! Till a few years or even months back, if anyone told me that I couldn’t eat rice anymore, I would run away from them and vow to never speak to them again! I never could imagine giving up on rice and fighting with my cravings. But keto has come as a revelation to me. I found out that it is possible for me to live without eating rice. It is possible for me to not have any kind of cravings. I wouldn’t have believed this if someone told me about this a few years back. Keto has done that magic for me. I don’t crave for any carbs anymore. I am actually able to eat what I am truly loving. And eggs constitute a big part of what I eat in a day. Everyday, the first meal for me is a cheesy gooey Indian style omelette! And I think I can’t do without it anymore!

So, some of you may wonder why I’m trying to share the recipe of an omelette here. I mean everyone knows how to make an omelette, right? Right. Almost everyone does. And I am not even claiming to want to ‘teach’ anyone how to make one. All I am trying to do here is share ‘my’ recipe of an Indian style Omelette with a filling of some amazing cheese. This is how I like to make mine. And trust me, it is delicious!

Apart from the above mentioned reason, I also wanted to share my photographs that I clicked of the omelette in question. My food, my space, my blog, my decision!

This kind of omelette is quite filling, I must add. I have this as the first meal of my day as I mentioned earlier, but it is usually ‘brunch’. My first meal is at around 12:30PM. So, for the next 3-4 hours, it keeps me full.

Let us get right to how I make my Omelette!

Instructions
  1. In a pan, saute the mushrooms in some butter for about a minute.
  2. In a bowl, add the eggs, onions, green chillies, coriander, salt, pepper, red chilli powder and the heavy cream.
  3. Whisk until the mixture is a little foamy.
  4. Heat the same pan used earlier and add the butter. Pour the egg mixture and with the help of a spatula, spread the onions and green chillies evenly.
  5. Keep the heat medium. In a few minutes, try to raise the sides of the omelette off the pan.When it is cooked from one side, flip it carefully.
  6. Now turn the heat to low. Spread the cheese on half of the omelette.
  7. Cover for about 1 minute and cook on low heat.
  8. Fold the other half over the cheese. Turn the heat off and serve. Enjoy with some hot coffee or tea!
Recipe Notes

If you don't like it too hot, reduce the amount of green chillies.
