I love bananas. I have said it before about a hundred times! And this Banana Bread with chopped walnuts is so scrumptious, so delicious and soft, that I am going to make this each time I decide to indulge in some desserts. On my cheat days, that is.

I am all about friends and friendships. There is no stronger bond than friendship. And I mean it. No exaggerations there. ‘Friend’ is an almost sacred word for me and it is reserved only for people who truly are special to me. Everyone else, companions.

We have been living away from home since a few years now and the one aspect about my earlier life that I miss the most is my friends. I have a very few number of friends and I cherish them. I miss them. In fact, when I met my husband before getting married, I was particularly curious about his views on the importance of friends and friendships. This was because I had heard some horror stories from people where guys usually don’t approve of their wives spending time and attention on her friends after marriage.

And that was my biggest fear and trigger point. But I am so fortunate that the universe looked out for me and sent Nishant to me. Right from get go, I saw how important his friends were to him. Not just that, he himself asked me how I felt about friendships and his friends. I couldn’t be happier. Him and me, were cut out from the same cloth!

Anyhow, all this long story just to get to the point that we got to spend a few days with two of Nishant’s friends from California a few months back. Safe to say, I can call them my friends now! They stayed with us for 3-4 days, all of which were filled with non stop food and fun!

Since, we were off our keto diet during those days, I decided to make some Walnut Banana Bread for me. I mean for everyone!

I cannot thank my dear friend Mansi for this amazingly simple and delicious recipe. if you are reading this Mansi, know that I am sending kisses and hugs to you!

In the days preceding that, I was searching the internet and Instagram for some nice banana bread recipe which did not use brown sugar. Why not brown sugar? ┬áBecause I did not want to add a ‘special’ ingredient. Brown sugar is not a regular in my kitchen and I did not want to buy it just for the banana bread. Finally, Mansi came to my rescue. She shared with me her recipe, that she promised she had had really good results and reviews with. So I looked no further and decided to attempt this bread.

Very simple and easily available ingredients is all you need for this recipe. I sliced the bread into about 15 slices and kept them in a ziplock bag in the fridge. It would hold well for about a week, but we obviously managed to finish it in 4 days! And so will you, most probably!

So without any further ado, let’s get right to the recipe.

The yummiest and easiest Walnut Banana Bread recipe ever! Promise!

  1. Preheat the oven to 350F or 180C.
  2. Cream together the butter and sugar. Be patient with this step.
  3. Add eggs and mashed bananas. Mix well till everything looks well combined.
  4. In a separate bowl, sift the flour, baking soda and the salt. Mix well.
  5. Add the banana mixture into the dry ingredients. Add the vanilla extract.
  6. Mix until just well combined. DO NOT OVERMIX.
  7. Pour into a greased and floured baking loaf pan and bake for 55-60 minutes. A toothpick inserted in the center should come out clean.
  8. Let it cool completely in the pan before taking out and slicing. TRUST ME! You don't want to mess with this when it is still warm. Remember it is still cooking while it's warm.

Soft yet crunchy on the top. The walnuts are a perfect addition to this Banana Bread. But feel free to add any other nuts to this. Even chocolate chips would be a great addition!
