Even though I love cooking and spending most of my time in my kitchen, I too sometimes try to find easier ways to get done with all the cooking. Read: ‘most of the time’ I am on the lookout for recipes which would translate to me spending less and less time cooking. Don’t get me wrong, I enjoy the process of cooking and it even acts as a stress buster for me. But when things start to become a routine, I get bored easily. Moreover, I have been spending more and more time with my camera these days which takes up a lot of my time. This in combination with all the repeated setting up and re-setting up of my house decor, I find myself trying to find short cuts in the kitchen. This Spicy Chicken Dhaba Style is one such recipe. On a regular basis, I always keep frozen chicken breasts or chicken thighs in the freezer. These come in handy on days when there are not much groceries available at home. These frozen chicken pieces are also a life saver in situations when I am craving for some quick Chicken curry or even quick Noodles stir fry with some chicken.

I have made this Spicy Chicken Dhaba Style in the past using both boneless and bone-in chicken and it tastes amazing either way.

Another thing that I must mention here is Habanero Chillies. I totally love these. Habanero chillies have a very distinct flavor. I like my food spicy and after coming to the US, I tried various green chillies that we get here. Be it serrano chilli peppers, anaheim chilli peppers, jalapenos or thai chillies. I like all of them. But these habanero ones really stuck with me. So I usually buy them from my local grocery store and freeze them for long term use. Whenever I am cooking something like a pulao or biryani or even this Spicy Chicken Dhaba Style, I pop a few out of the freezer and use them in the recipe.

This particular recipe pairs really well with rotis, paranthas and rice. We mostly enjoy this with rice though.

Though I am on keto these days, this recipe is suitable for me as well. I just skip the rice or roti and enjoy this with a dollop of homemade desi ghee!

Spicy Chicken Dhaba Style
A very simple and extremely flavorful Chicken dish - gets done so quick!
Instructions
  1. In a wok, add the ghee and heat well. Add the bay leaves, dried red chillies and the peppercorns. Sauté for about 30 seconds.
  2. Add the cumin seeds and the heeng. Sauté till the cumin seeds change color a little bit.
  3. Add the onions and sauté till they change color to a light pink. This shouldn't take more than 5 minutes. Add the ginger garlic paste and sauté for a little while.
  4. Add the tomato and chopped up habanero chilli. Add all the powdered spices along with half a cup of water. Sauté till oil separates.
  5. Add the chicken and mix well. Don't add any water just yet. Sear the chicken on high flame till it becomes all white.
  6. Once the chicken turns white, add about half a cup of water. Don't add much unless you want a soupy curry. This is because the chicken is also going to release moisture and the gravy with thin anyway.
  7. Cover and cook till chicken is done. This should take about 10 more minutes. Add the kasuri methi. Mix well and add coriander for garnish.
  8. Enjoy!

This dish tastes the best when the gravy is thick. It shouldn’t be soupy in my opinion.
