Hello everyone! I has been a long time since I was gone. I am sorry, I should not let my ‘moods’ take over. And I should never stay away from what is truly my creative outlet.

OK. That was a pretty ‘straight-from-heart’ sorry note! I truly do feel bad that I didn’t do this sooner.

Anyway, how have all of you been? I have had some major decisions taken in the last few days. Exciting and nerve wracking at the same time! But that’s life for you. I am still learning to calm my nerves and try to take each day as it comes. I am sure many of you go through phases and days like these. How do you deal with them? How do you not let your mind go crazy with excitement? I would really like to know. I am probably the biggest ball of nerves and excitement at the same time!

A few weeks back, I shared this photo on my Instagram and promised to share the recipe soon. But weeks have passed and I still haven’t been able to comply. The recipe in question is my rendition of EGG ROLL IN A BOWL.

A usual egg roll is some minced meat cooked with cabbage and wrapped in a wonton wrap or something like that. Since on keto, I can’t really eat that, I frantically tried to make something that is delicious and quick and makes me not wanna cheat! On a facebook page, I saw someone had mentioned that they wanted to make an easier version of egg roll which would be keto friendly.

That gave me an idea.

I decided to give it a try. And I was really really happy with the end product.


Minced pork is usually used to make Egg rolls. But honestly, in my opinion, you can choose any filling that you want. You can use minced chicken, minced pork, minced beef or even minced paneer. The last one would obviously be called something like – paneer bhurji! Haha! But that’s what I mean. This recipe can be modified and made with any kind of ‘meat’.

The USP of this recipe for me is how easy and quick it is. You really don’t have to fret over any spices or ingredients. All you need is a few simple ingredients and with minimum amount of work, you have yourself a super delicious and quick meal.

So without further ado, let’s get started with the recipe.

  1. In a wok, heat the oil. Add the minced garlic and sauté for 1 minute.
  2. Add the minced meat and mix well. Cook on high heat constantly stirring. Add the salt and the rest of the seasonings.
  3. Mix well and continue stirring. Lower the heat and cover and cook till the meat is cooked through. This shouldn't take more than 10-15 minutes. Lift the cover and stir occasionally. The meat will cook in its own juices.
  4. When the meat is almost cooked, add the chopped cabbage and onions. mix well. Cook on high heat for about 5 minutes, while stirring. I like the cabbage still a little crunchy.
  5. Check for seasoning and add the chopped coriander. Enjoy!
