Hello everyone! Recently, I and my husband celebrated our second wedding anniversary. We made a pact this year that we are not really going to buy presents/ gifts for each other on our anniversaries but would try to make the day special in other ways. We tried to do just that. Now, since I am on keto, I decided to give myself a little slack at least for our anniversary dinner. Another reason for doing this was because my husband has a huge sweet tooth and I knew he would absolutely love it if I made a chocolate cake for him. And of course, I would HAVE to have that cake! Love comes before everything else. Doesn’t it?! So I decided to make this sugar free chocolate cake, which is not exactly keto but still healthier than a normal cake.
While this cake and a small love-filled video for my husband was the ‘surprise’ from my side, him being the amazing planner had planned a surprise romantic dinner cruise for us! On the river Willamette. I don’t think I could have asked for a better surprise. These are the kind of memories that I want to make with him. I will share more details of the cruise in my upcoming posts.

Let us talk a little about the recipe and the ingredients. Since, the cake is sugar-free, you are going to have to have a substitute for the sugar. You can’t have a non-sweet cake, right!? I used Splenda in this cake. It is zero calorie, sugar free sweetener. There was absolutely no difference in the taste.

For tis cake, the frosting I used was a Whipped cream cheese frosting. I promise you, I came up with this particular recipe and ratios on my own and I was ecstatic with how it turned out. Stay tuned for the recipe in the next post.
