I live away from my motherland but each day my love and appreciation for my country only increases. With that being said, let me also tell you that today I am back with another recipe perfect for your Rakshabandhan menu – Besan Ladoo! Not just for Rakshabandhan, you can make this easier and quicker version of this traditional dessert on any occasion and any festival.

Yes, I said ‘easier and quicker’ version! Well, what else would you expect from me?! If you check out all the previously posted recipes on my blog, it wouldn’t be long before you notice that I like to make classic recipes in the easiest possible way without compromising on the flavors!

Coming to Besan Ladoo, these are basically sweetened balls made of slow roasted gram flour with clarified butter/ ghee. When done correctly, the texture and taste of these can blow your mind! The aroma that wafts in the whole house is a sure shot signal that you are doing it right! Besan ladoos are a traditional ‘mithai’ and is an almost staple in our households on those special occasions and festivals.

My recipe is an easy and quicker version of the traditional recipe. I got mine from my friend’s mother who has been making these since many years. You can make these ahead of time and serve them on your Rakhi thali on Rakshabandhan. The trick to making the perfect ladoo is to watch carefully while roasting the besan. You dry roast the besan on low heat for about 10-12 minutes while stirring continuously before adding melted ghee. Then you continue roasting the mixture for another 5-6 minutes till you get a nice nutty fragrance. At this point, you need to make sure that the mixture doesn’t get too brown. Just when the nutty fragrance comes, switch off the heat.

  1. Sift the besan and dry roast on low heat for about 10-12 minutes. Make sure you are continuously stirring so that there is even browning.
  2. After about 10-12 minutes, add the melted ghee to this and continue stirring. Keep the heat on low.
  3. Once you start getting a nutty fragrance, switch off the heat.
  4. Mix in the fine granulated sugar and the powdered green cardamom seeds.
  5. Let it rest till it becomes a little cool such that you are able to form balls with your hands.
  6. If you are not able to make the balls, let the mixture rest in the fridge for 10-15 minutes. The mix will become more pliable.
  7. Make the balls and garnish with the almonds. Enjoy!
