Banoffee Pie – Hello bananas and Hello easy!

Hello everyone! It’s no secret in my household how much I am in love with bananas. My mom has for years been struggling to get me to eat fruits, I no like fruits! But bananas! That’s a different story. You would never find me saying ‘no’ to bananas and you’ll always find a stash of them on my dining table. Since I started cooking and baking, recipes using bananas were the first ones I searched for. I had made Banana Chocolate cupcakes in the past. And today I am going to share with you yet another delicious recipe – BANOFFEE PIE! Don’t know what that is? Just keep on reading..

So you must have already guessed by now that bananas are a key ingredient in Banoffee Pie. To give you a little history, this dessert was invented by the British and the name is actually derived from ‘banana’ and ‘coffee’. Ever since I tried this dessert back in India a couple of years back, this became my number one dessert! My all-time favorite! It is so creamy, so light, banana-ey and so ooey-gooey at the same time! Until recently, I never imagined that I could ever make this myself.

If you look at a slice of this pie, you would see why I thought this was out of my league, why I thought I would never be able to make this at home. This dessert is made of multiple layers and that makes it look very complicated. Since I am myself learning baking and cooking, this seemed like too much to bite in one go, if you know what I mean! I thought that there would be multiple steps in making this and some complicated baking procedure with some hard to get ingredients. I couldn’t have been more wrong! There is just no baking involved in this. Yes! You do not need an oven for this. Secondly, the recipe is so simple and involves such little actual work!

So without further ado, let’s get started!

To make Dulce De Leche
  1. In a large pot of water, put the unopened can of condensed milk. Let the water boil. Once it comes to a boil, lower the heat a little such that the water still keeps at a rolling boil but does not go crazy!
  2. Keep a careful eye on it. Let it boil for about 2-3 hours.
  3. Keep checking on the level of water after every 30 minutes. The level of water should be about 1 inch above the level of the can at all times.
  4. Be very careful while doing this.
  5. After 3 hours, remove the can from water and let it cool down. Once it cools, carefully open the can.What you have is Dulce De Leche!
For assembling
  1. In a food processor, run the digestive biscuits and make the crumbs.
  2. Mix these crumbs with the melted butter slowly.
  3. Line a 9 inch springform pan with parchment paper. Put the crumbs in it and with the help of your hands, press the crumbs at the base. Press firmly. Keep it in the refrigerator for about 1 hour.
  4. Empty the dulce de leche can over the biscuit base. Spread it evenly. Cool in the fridge again for about 1 hour again.
  5. In a cold cowl, add the whipping cream, castor sugar and the coffee granules. Beat till you reach soft peak stage.
  6. Just before serving, chop the bananas in 1/2 cm slices and arrange them over the dulce de leche. Spread the whipped cream over this and sprinkle some shaved chocolate chips for garnishing!
